Goat Meat
Goat has not been a traditional red meat for those of us here in North America, yet the world has enjoyed and benefited from goat meat for centuries. Lower in total fat, saturated fat, calories and cholesterol than traditional meats, it just might be the perfect red meat for you. It's not as lean as elk or deer and not as rich as lamb, yet retains a sweet flavor reminiscent of lamb. Protein content is similar, but goat has some unique saturated fat and cholesterol characteristics. Goat fat has much less saurated fat and higher levels of mono and polyunsaturated fat, a fact that can be visually observed in the more liquid goat fat drippings after cooking. Less saturated fat = less cholesterol = a heathier red meat for you. Interestingly, a University of Florida blind study of 600 U.S. consumers (using barbequed meat) determined that the "overall appeal" rating was that about 42% of tasters preferred the goat, while 38% preferred the beef, and 20% could not tell much difference. Until recently, Capretto goat meat was usually just a delicacy found only in American restaurants or at special occasions, but now Open Valley Farms has introduced this delicious meat over the Internet for all to enjoy in New York State.
