Christmas specials
Veal
We usually raise about 12 - 14 veal calves per year.  They are fed milk and hay ( the hay is to prevent anemia), and are kept in a small building with a yard for exercise in good weather.  They are processed at 5 months of age or 500 lbs. whichever comes first and dress approximately 250 lbs of meat. 
 
 
Goat and Lamb
We raise hot house milk fed goats and lambs year round and have a large number available for the Christmas and Easter Season.  You should place your order very early for these if processing is required as appointments at our butcher fill up quickly during this season.
The larger lamb and goat are raised on pasture when available and good quality hay.  Grain is used to supplement their diet and ensure a good marbling in the meat. Animals are usually 6 - 10 months in age when processed for a smaller more tender cut without excessive muscling.

 

 

Chicken

 
We raise over 200 range chickens per year which get processed between Sept and November.  They are purchased as chicks and started in the greenhouse until they feather.  They then roam the pastures until they reach between 5 and 8 pounds.  Orders should be placed early to avoid dissappointment.
